You can vary infinitely with flavors, colors, fillings, textures and decoration.
In this course I will teach you how to make different tartelettes, each of which will be a discovery in itself and will enable you to start discovering your own creativity!

Below you will find a short description of 7 specific tartelettes included in this course, however you can combine tastes, textures and techniques as you wish and to your own liking.

Pistachio Raspberry Tartelette


A classic combination of raspberry and pistachio. But there is a very valid reason why this combination appears in many desserts. The sourness of the raspberry and the full, creamy taste of the pistachio provide perfect balance without being overpowering.

This Pistachio Raspberry Tartelette consists of: 

  • Whipped pistachio ganache
  • Pistachio shortbread
  • Pistachio almond cream
  • Confit of raspberry

Snickers Tartelette

Snickers tartelette needs no introduction. Chocolate, caramel and peanuts, who doesn't love them?


This tartelette consists of:


  • Chocolate shortbread
  • Crispy layer with peanut
  • Caramel sauce
  • White chocolate mousse
  • Whipped ganache
  • Rocher glaze

Banana Tartelette

This is a delicious tartelette with different flavors of banana. 

The dough we use here is pâte sucrée (sweet dough), but of course you can also use pâte sablée (shortbread) here. I explain which dough is best to use and when in the theory course. 

This Banana Tartelette consists of:


  • Sweet dough
  • Banana cream
  • Whipped banana ganache with mascarpone
  • Caramelized banana
  • Caramelized nuts

Blackberry PannaCotta Tartelette

This tartelette is for people who like the sourness of fruit. We make crémeux from blackberries, panna cotta from yoghurt and a crispy layer. 
The nice thing is that you can also make crémeux from other fruit, you can use almost any fruit for this: raspberries, passion fruit, lemon, raspberry, strawberry, cherries, etc. This way you can experiment almost endlessly with different flavors.


This Blackberry Panna Cotta tartelette consists of: 


  • Shortbread
  • Yoghurt panna cotta
  • Crispy layer
  • Blackberry crémeux

Baileys Pecan Tartelette

People who know me a little, know that I love Baileys. Baileys fits very well, especially with a tartelette that you can serve with a coffee.


This Baileys Pecan tartelette consists of:


  • Shortbread
  • Chocolate almond cream
  • Chocolate Baileys ganache
  • Caramelized nuts
  • Whipped Baileys ganache
  • Crispy decoration

Vanille Namelaka Tartelette

This tartelette has a very recognizable and very soft taste. The nice thing about this tartelette is that you have many options in terms of topping. We are going to make ganache from fruit and here you can use very mild fruit such as strawberry, pear, banana, but also spicy fruit such as cassis, passion fruit, cherries.

Depending on the season, you can adjust the taste of the whipped ganache and you can also adjust your decoration to the season, such as fresh strawberries, cherries, apricots.

  • Vanilla namelaka
  • Whipped fruit ganache

Bellini Tartelette

The Bellini tartelette is completely inspired by a well-known Italian cocktail “Bellini”. Bellini is made from peach and prosecco (Italian sparkling wine). And this is exactly what we are going to use in this tartellete: prosecco and peach.


Depending on the season, you can use fresh peach or peach in syrup.

This Bellini tartelette consists of:

  • Whipped prosecco ganache
  • Shortbread decoration
